Clark’s Oyster Bar in Montecito is a love letter to coastal living — seafood is king, the design is chic, and each detail nods to life by the water. The newest outpost from Austin-based MML Hospitality, this California expansion brings a stylish all-day oyster bar to the heart of Montecito. It opened in December.
The space at Clark’s is a masterclass in understated nautical elegance — rich blue and gold hues, mid-century rattan furniture, vintage boat ads on the walls, and menus printed on naval maps. A tiled oyster bar connects to a cozy dining room with leather booths, while the patio — adorned with striped awnings and climbing vines — channels the ease of a European seaside escape.
Seafood-driven dishes celebrate the bounty of the Pacific. A welcome plate of sourdough bread, butter, and radishes set the tone for a meal that’s both refined and unfussy. Start with oysters, crudos, Santa Barbara uni, or California spot prawns. The mussels and clams (served in a sunshine-yellow Le Creuset pan) come bathed in a briny, garlicky, and lemony broth worth finishing by the spoonful. The fish of the day is simply prepared, paired with an endive salad and salsa verde.
Drinks are classic but polished — crisp wines, refreshing cocktails/mocktails, and a tight beer selection that complements the seafood-forward menu. Service is warm and effortless, with staff outfitted in retro uniforms that add to the throwback charm. The only caveat? The AC runs strong: great for oysters, but bring a sweater. –Victoire Loup
